Today’s post is about food! Aside from running itself, I think diet is one of the easiest ways to get faster. There are lots of competing ideas out there about what is best – and while I’m not qualified to give an opinion on that, I think one consensus is that vegetables are important! A quick and easy meal for me is veggies and wild rice. I prefer veggies from Syracuse Real Food Co-Op ( or Stones Throw Farm (, but I’ll also get them at Wegmans, particularly during winter.

I usually try and get an assortment of veggies, as well as some mushrooms – and lots of garlic (as seen above). I heat them up in a little olive oil and eat them with wild rice. Occasionally, I’ll add a little soy sauce, but not always.

The best part is that it’s a pretty light meal, so I can have a cookie from Zimmer’s Bakes afterwards (

Like I mentioned above, there are lots of competing theories out there. With that being said, I found this recent article in Ultrarunning magazine to be pretty interesting:

  1. Oh I LOVE veggies, and garlic, and MUSHROOMS! It seems like I am not the only one today thinking and focusing on clean eating 😀 Oh, February, when are you gonna end?! Great read! xoxo

  2. I’ve learned to love vegetables. I usually eat one meal a day that includes veggies, but lots of them – it could be a salad or a stir fry or like you, rice and veggies. But I always make sure to include lots of vegetables to reach the quota for the day.
